I have tried to make two separate batches of mint jelly and…?
both have failed to set up. I followed the directions to the letter on “Certo’s” Sure Jell package, and used two different types of mint, and both have seem to set only about 50% after 48 hrs. What to do?
I had this happen with strawberry jam. I simply added the jam back to the pot and boiled it to reduce it further. It became thicker and more jelly like. I cleaned and sterilized the jars and refilled them with the jam and processed the jars in a water bath. They were nice and gelled up when they cooled. Sometimes that’s all you need to do is reduce it down a little.
